The holiday season is in full swing. If the words “hectic, stressed, overwhelmed” come to mind, you’re not alone. It’s that time of year when our calendar suddenly fills up with all kinds of social gatherings and Christmas potluck parties. Seriously, we’re all just at our wit’s end trying to think of what to make and trying to find the time to do so (at least I am).

So here are 5 easy and healthy-ish ideas you can whip up the night before you head to your next potluck party. Whether you’re going to a family gathering, or to an office Christmas party (and are somewhat trying to impress your boss), these yummy items all take less than 15 minutes to conjure up.

And best of all, now you won’t have to be that person who brings store-bought brownies and pretended like you made them…

1. Brie Cheese topped with Jam and Cranberries on Lavash Crackers

Cheese and crackers are probably the easiest and quickest item you can bring to your potluck party. However, give it a gourmet twist by using some fancy, soft cheeses like Brie, Camembert or Goat and spread it onto a thin grain cracker such as Lavash Crackers by Ozery Bakery (wholesome, free of artificial preservatives and non-GMO). Drizzle some strawberry jam and sprinkle some dried cranberries and you’ve got yourself a party pleaser!

Total time required: 5-10 minutes (depending on how fast you cut the cheese…)

2. Nut protein balls covered in cocoa powder, chia seeds or almond slivers

This might not be a traditional item to bring to a potluck party, but it’s super healthy and easy to make. Your fellow party-goers might even thank you for mixing it up amongst the plethoras of high calorie treats like shortbread cookies and holiday colored cupcakes.

Basic recipe:

  • 2 cups of dates (pre-soak for 10 minutes)
  • 2-3 tbsp of peanut butter
  • 1 tbsp coconut oil
  • ⅓ cup of seeds (pumpkin, sunflower etc.)

Put everything into a food processor and blend. Roll into balls 2 inches wide and coat with either cocoa powder, sliced almonds, hemp, chia or flax seeds. Freeze for 10 minutes and serve after it hardens!

3. Oat cranberry cookies with white chocolate chips

This healthy version of an oatmeal cookie will leave everyone wanting more. Simply mix all the ingredients together, roll into 15 round balls and bake for 8-10 minutes at 325F.

Recipe

  • 3 tbsp of butter
  • 1 egg
  • ½ whole wheat flour
  • 1 ½ cups of rolled oats
  • ¼ cup of dried cranberries
  • ¼ cup of white chocolate chips
  • pinch of salt
  • ¼ tsp baking soda

Total time required: 15 minutes

4. Guacamole bites with goat cheese

Everyone loves guacamole, right? So give it a spin by spreading the guac onto some pita crackers and sprinkling goat cheese for a finishing touch. These party bites are a safe bet to make; just make sure you add enough lemon to the avocados to prevent them from turning brown. Alternatively, make the guac right before your potluck party!

Guacamole recipe

  • 3 avocados
  • ¼ diced onion
  • 1 garlic, finely chopped
  • juice of 1 lemon (depending on how sour you want to make it)
  • ⅓ cup of cilantro
  • ½ tsp of salt

Total time required: 15 minutes

5. Tabouli salad

Who doesn’t love a good tabouli salad at a potluck party? Tabouli can super quick to make if you’ve got a food processor – just make sure you have all the ingredients on hand before starting. Note: feel free to adjust the amount of raw onion and garlic so it doesn’t leave all the guests with dragon breath.

Tabouli recipe

  • 1 can of chickpeas
  • 2 cups of couscous
  • 2 tsp dry mint flakes
  • 4 garlic cloves
  • ½ tsp black pepper
  • 2 tsp sea salt
  • ½ 1 cup of green onions
  • 2 cups of cucumber
  • 2 cups of tomatoes (use slightly unripened tomatoes that are a little more firm)
  • 2 cups of olive oil
  • 1½ cups of lemon juice

Toss all the ingredients (except the olive oil, lemon juice, and couscous) into a food processor and let the device do all the chopping for you. Then pour everything into a large mixing bowl, add the olive oil, lemon juice, and couscous. Let the raw couscous absorb all the liquid and expand before serving.

Total time required: 15 minutes

    This is so timely, office Christmas parties can bring pressure to deliver something healthy and creative. My old boss used to give out prizes to the best potluck items.
